FSUIPC data

Hello, I am currently writing my bachelor's thesis and for this I need to do some flight tests on a simulator (P3Dv4) which I need to analyze. So I need altitude, longitude and latitude with the highest possible sampling rate. I have FSUIPC running on my computer. Is it possible to get this data via FSUIPC? Or write a small tool that can write this data via FSUIPC? So that I can get a .txt or .csv file from it. Thanks in advance!
