You will have to use the 'open climb' feature by pulling the altitude knob (after you have selected a new target altitude).. The autothrust will go to CLB thrust and the climb rate will adjust according to your set airspeed, that will give you the max climb. I think this is similar to 'lvl change' on Boeing.
