..well, I do find toggle Alternators assignment for engine 1 & 2 (which doesn't serve the purpose), but no on/off like Cabin Light or Prop-Sync

 

Any Idea

FSUIPC can only offer those controls which are implemented. They are FS controls.

You could try writing to the relevant FSUIPC offsets instead, using the Offset controls FSUIPC provides..
