I can't seem to program my throttle to turn on reverse thrusters when I pull it all the way back on my Aerosoft Airbus A320.  When I go into Joystick Calibration > Main flight controls I'm able to set my throttle there.  But it looks to me like reverse thrusters need to be set in the Separate throttles per engine section.  In this section when I move the throttle nothing registers.  When I click on 'Set' for Reverse, Idle, and Max they all get set to 0.

You're talking about FSUIPC calibration, right? Does the Aerosoft aircraft accept FSUIPC calibration? I know PMDG 737 and 777 don't -- you get conflicts.

Yes, exactly as documented -- you didn't refer to the calibration section in the FSUIPC User guide?

Because they need separate throttle control inputs.  If you are using a single throttle for all engines you have to map it on the Main flight controls page.

All this is clearly documented. Please do use the documentation provided. It would save you and I a lot of time! ;-)
