I couldn't find the correct Offset to do so. When you say you couldn't find such information, where are you looking? Did you try searching the Offsets table, in the SDK documentation, for "fuel"? You'll find lots of references, all explained. There are separate values for each tank, which you'd need to add up for total. If you are only concerned with FSX there is a total provided, too.
