I cannot find controls for external quickviews for Button and Switch Assignments.

You can use the external quickview presets:

For other external quickview controls, you would need to either define your own preset, or assign a key combination to the control in MSFS and then assign to this key combination in FSUIPC.

For some reason I struggle to get it working.  For all 8 external quickviews I see the same camera view from behind the aircraft.

Have you defined and saved the quickviews? If not, do that first. Otherwise, if you have issues with MobiFlight presets, you should report/ask about this on the MobiFlight discord server (MSFS2020 channel). However, I can take a look here, but will be later today or tomorrow - I will get back to you on this once tested here.

Alos, I cannot get "Pan Heading" working on an axis.

Pan Heading has not worked since the release of MSFS2020. From the FSUIPC7 README.txt:

Quote

Quite a few events/controls that are available in MSFS are not available (or are provided but have
no effect/don't work) for use by 3rd party applications via the provided SDKs. These include:
   - events for view control
   - events for slew control
   - events for weather

For view and slew control, you can assign in MSFS or assign in FSUIPC7 but to the default key assignments
used for view/slew control in MSFS.
