So if the winds are a bit different after starting a scenario is there a way to reconfigure arriving aircraft to start using different runways?

In the command panel. Do you see the green mark on the active runway? Click on the runway you want to enable as arrival runway (the button is now green), then click on the active arrival runway you want to deselect, if necessary (if it's the same runway in opposite direction, it's switched automatically).

Of course I could not find it, until I posted this and right after realized it was staring me in the face lol

As much as you can change the runway setup, aircraft may not accept the change due to wind direction. I've mainly noticed this on weather scenarios mind.
